One of our favourite parks is DeLeon Springs State Park which has an unusual addition - The Old Spanish Sugar Mill. This is a 'one off' type of restaurant. Each table has a griddle in the middle and you have pitchers batter (a five different flours kind and a white) and make your own pancakes at the table. (This is the only time apart from the BBQ my other half does any cooking). You can also purchase sides of fruits, nuts, chocolate chips etc to 'personalise' your pancakes. They do have other items on the menu. It is always very busy so we find it is best to try and reserve a time when we arrive.

The park itself, like all the others, is lovely with a variety of activities. The eco boat trip is excellent and the captain is very informative and we have seen a great variety of wildlife. It is also possible to hire a canoe or kayak.

Unlike Blue Springs where you can only swim at certain times of the year, as it is a manatee refuge, here you can swim all year. The water is a constant 72 degree due in a spring fed pool. Scuba diving is also allowed.

There are 2 main trails one short and the other much longer which you have to notify the rangers if you take it.

We also enjoy the small museum which covers the history and wildlife in the area.

Exit I4 at junction 118A-B; take US Hwy 17 North from Deland for approximately 6 miles, following the State Park signs; turn left onto Ponce DeLeon Blvd and it is approximately 1 mile to the entrance which is on the left (I think). It is definitely worth the drive.

Its lovely to hear about different things to do - apart from the parks! Although the parks are brilliant, its often nice to do something a little out of the ordinary. This sounds perfect.

This is quite unique! I finally had a chance to check out the website. The pancakes are all you can eat for only $4.50 and there are other selections on the menu if somebody in your family is not into pancakes (I have one daughter who has never liked pancakes!) as well as all the usual breakfast side dishes.
